The HI3897 Olive Oil Acidity Test Kit is used to determine the percent acidity of olive oil. The percent acidity of olive oil is a direct indicator of quality, grade, and freshness. Traditionally, testing for acidity is a complex process that requires the use of various chemicals in a laboratory setting. The HI3897 uses a titration method where the endpoint is visually determined as the color changes from yellow-green to pink. WHAT ARE ACIDS IN OLIVE OIL?
Acidity (as % oleic acid) is the most basic measurement of olive oil. It is the main indicator of the purity and freshness of olive oil. The quality of olive oil is directly related to the degree of decomposition of fatty acids in the oil. When the bonded fatty acids are broken down, free fatty acids are formed, increasing the acidity of the oil. Acidity is a measure of the free fatty acids present in the oil, which is directly related to its purity.
The quality of olive oil can be adversely affected by ripening or environmental conditions. Mishandling, handling, and bruising during harvest can also contribute to the breakdown of fatty acids and increased free acidity. Improper and/or prolonged storage can cause olive oil to spoil and become rancid. Regular acidity testing is the best way to ensure and maintain quality and freshness.
Acidity is used to distinguish an extra virgin olive oil from all other olive oils. According to the CEE regulation 2568/91, olive oil is considered extra virgin when its acidity level is below 1%. A low acidity value also indicates a natural extraction process that occurs shortly after the olives are harvested.
