WHY IS IT NECESSARY TO CONTROL THE pH IN MILK?

One of the most important measurements in milk is pH. pH affects many qualities of food products such as flavor, fermentation, texture, appearance, and stability itself. Foods are generally divided into two groups based on their pH value. The two groups are Acidic foods has a naturally low pH of 4.6 or less and low acid foods have a final equilibrium pH greater than 4.6 and a water activity greater than 0.85. Low acid foods can be adjusted with an acid to lower the final pH and become acidic foods. Maintaining a low pH will help prevent unwanted bacteria from growing.
