pH IN SUSHI
Sushi rice needs to be kept warm (about 32°C /90oF) for best results when rolling sushi. However, this temperature can pose a food safety risk, especially when rice is kept for several hours in what is considered a food “danger zone.” In the sushi making process, pH monitoring is considered essential and some customers are required to maintain records of holding time and pH levels. Most regulations require that sushi rice be acidified with an acid such as vinegar to maintain a pH below 4.6. The lower pH inhibits bacterial growth, keeping sushi rice safe for consumption.
