The HI96841 is a compact, professional-grade refractive index meter for brewing. In 1.5 seconds, the HI96841 measures the refractive index of the wort and converts it to °Plato units with automatic temperature compensation. The upgraded LCD display allows users to view the measurement results and the temperature of the sample simultaneously. The rugged plastic housing is IP65 waterproof and the stainless steel sample chamber allows the meter to operate well in harsh environments, making the HI96841 a very suitable device for use in wine and beer cellars.

°Plato is a measure of the concentration of sugars and dissolved solids in beer and wine prior to fermentation. This can be used to estimate the alcohol content of the finished beer. The HI96841 will convert refractive index to °Plato based on data from the International Commission for Uniform Methods of Sugar Analysis (ICUMSA) and the American Society of Brewing Chemists (ASBC).

Description: refractive index

REFRGUSTING INDEX

The HI96841 measures the refractive index of a sample. Refractive index is a measure of the amount of light that is transmitted through a sample. Depending on the composition of the sample, light will be reflected and refracted differently. By measuring the refracted light beam with a state-of-the-art detector system, the refractive index can be determined, which can then be used to infer the properties of the sample, such as concentration and density. In addition to a linear light sensor, the HI96841 uses an LED, lens, and prism to measure the refracted beam. 

Temperature changes will affect the accuracy of the measurement value by changing the physical nature of the sample. Therefore, in refractometry, measuring and compensating for temperature is essential to provide reliable results. Therefore, the HI96841 has a built-in temperature sensor and is programmed with appropriate algorithms to compensate the temperature of the measurement value according to the ICUMSA Standard for mass percent sucrose solution.

Affected by alcohol concentration

It should be noted that when the fermentation process begins, ethanol and reducing sugar will interact with each other and affect the accuracy of the Brix measurement of reducing sugar. For that reason, the refractometer should not be used to measure the finished product but should only be used to measure beer and wine before fermentation.
