The HI96813 is a portable refractometer that converts the refractive index of a sample to sucrose concentration as a percent by weight (%Brix). This conversion is based on the ICUMSA (International Commission for Uniform Methods of Sugar Analysis) Methods Book for changes in refractive index with temperature in a percent by weight glucose solution. Since the majority of the sugar in grape juice is fructose and glucose rather than sucrose, the reading is sometimes referred to as “Apparent Brix”.

The HI96813 allows the user to tailor the instrument to their specific needs based on their experience, as there is no specific conversion factor for all applications. The initial conversion is based on the % Brix value and the conversion factor is adjustable from 0.50 to 0.70 (0.55 is a common value).

Alcohol content (%V/V) = (0.50 to 0.70) x % Brix

One drawback to the above equation is that it does not take into account unfermentable and extractable sugars. A second equation is also available that takes these factors into account and can give a more accurate estimate of the alcohol content of the finished wine. This conversion is labeled “C1” on the machine and uses the following equation:

Alcohol content (% V / V) = 0.059 x [(2.66 x °Oe) – 30] (C1)

The HI96813 is an easy-to-use tool for winemakers to measure sugar and alcohol content in grapes or fermented grape juice, either in the field or in the laboratory.

Refractive Index 

The HI96813 allows for measurements based on a sample’s refractive index. Refractive index is a measure of how light behaves as it passes through a sample. Depending on the composition of the sample, light will refract and reflect differently. By measuring this with a linear image sensor, the sample’s refractive index can be assessed and used to determine its physical properties such as concentration and density. In addition to the linear image sensor, the HI96813 uses an LED light, prism, and lens to make measurement possible.

Temperature variations will affect the accuracy of refractometry results, so temperature compensation is necessary to produce reliable results. The HI96814 incorporates a built-in temperature sensor and is programmed with industry-standard algorithms that then apply temperature compensation to measurements according to ICUMSA standards for a percent by weight sucrose solution.

 

To make a standard % Brix solution (sucrose):

To make a Brix solution, follow the steps below:

  • Place the container (such as a glass jar or dropper bottle with a cap) on an analytical balance.
  • Tare
  • To make an X BRIX solution, weigh X grams of High Purity Sucrose (CAS #: 57-50-1) directly into the container.
  • Add distilled or deionized water to the container so that the total weight of the solution is 100g.

Note: The solution above 65% Brix should be stirred vigorously or shaken and heated in a water bath to 40oC. Remove the solution from the tank when the sucrose has dissolved and allow to cool before use.
