Force and mechanical measuring equipment
The HI96802 is a portable refractometer for food applications that measures the sugar content of aqueous solutions as % Fructose by mass (%w/w). The HI96802 provides results with an accuracy of ±0.2%. The operation of the meter is simplified with only two buttons: one for calibration with distilled or deionized water and one for measurement. All readings are automatically compensated for temperature variations according to the ICUMSA Methods Book and displayed within a 1.5 second response time. The sealed flint glass prism and stainless steel construction are easy to clean. Simply wipe with a soft cloth in preparation for the next sample.
– Measure from 0 to 85% mass (% w/w fructose)
– Small sample size, about 2 drops of solution (0.1 mL)
– Automatic temperature compensation
– Simple and easy calibration with just 1 key
– Fast, accurate measurement in 1.5 seconds
The HI96802 is a portable refractometer that converts the refractive index of a food sample to % fructose by mass. This conversion is based on the ICUMSA (International Commission for Uniform Methods of Sugar Analysis) Methods Book for the changes in refractive index with temperature in percent by weight fructose solutions. The HI96802 is ideal for the analysis of fruits, energy drinks, puddings, soy milk, juices, jams, marmalades, honey, jellies, soups, tofu and condiments. The HI96802 is easy to use for measuring sugar in food samples or in the laboratory.
To make a standard % Fructose solution:
To make a fructose solution, follow the steps below:
Note: The solution on 65% needs to be stirred or shaken vigorously and the water heated to about 40oC. Remove the solution from the tank when the fructose has completely dissolved and allow to cool before use.

Refractive Index
The HI96802 allows for measurements based on a sample’s refractive index. Refractive index is a measure of how light behaves as it passes through a sample. Depending on the composition of the sample, light will refract and reflect differently. By measuring this with a linear image sensor, the sample’s refractive index can be assessed and used to determine its physical properties such as concentration and density. In addition to the linear image sensor, the HI96802 uses an LED light, prism, and lens to make measurement possible.
Temperature variations will affect the accuracy of refractometry results, so temperature compensation is necessary to produce reliable results. The HI96802 incorporates a built-in temperature sensor and is programmed with industry-standard algorithms that then apply temperature compensation to measurements according to ICUMSA standards for a percent by weight fructose solution.
