AMCO AEPA-1 TURBIDITY STANDARD SOLUTION

AMCO AEPA-1 Standard is recognized by USEPA. The non-toxic standard is made of styrene divinylbenzene polymer that is uniform in size and density. The solution is pre-contained in cuvettes and light-proof protective boxes and can be used repeatedly until the expiry date.

IMPORTANCE 

Unrefined wines often suffer from reduced clarity or turbidity due to suspended solids produced during fermentation, and to deal with this problem, special chemicals are used, and are often treated with chemicals that increase the clarity of the wine. Among them, thaumatin-like proteins (TLPs) and chitinases are the two main proteins that are thought to cause turbidity in wine, these substances are easily altered and combine together into clusters, creating hazy streaks, reducing the clarity of the wine.

Stabilizing and preventing protein precipitation in white wine before bottling is a very common problem in the winemaking process. One of the most common substances today is bentonite, a substance often found in soft volcanic soil (such as Kaolin), which will increase the clarity and stability of the wine, but also has the drawback of creating sediment layers, reducing tannins and discoloring the wine. Because there are many types of bentonite with different protein stabilization abilities, it is necessary to test in the laboratory many times to determine the appropriate amount of bentonite to add to the wine cellar.

Normally, in red wine, because of the high content of phenols, it will automatically combine with unstable proteins and precipitate before bottling, so there is usually no problem with wine stabilization. Just add about 12 g/hL bentonite (1 lb/1000 gal) to the wine to partially remove suspended solids, increasing the efficiency of the filtration process.

However, for wines with low phenols content such as white wine, light red wine, protein stability needs to be tested before bottling. Based on that need, Hanna has created a device that can quickly test to determine the risk of protein causing cloudiness in wine in the future. If the protein is found to be unstable, the next test step will determine the amount of bentonite needed to increase protein stability. It is important to note that too much bentonite should not be added, to avoid changing the smell, taste and color of the wine, such as light-colored wines. In addition, adding just the right amount of bentonite will help the wine have the highest stability at the most economical cost.

Initially, the winemaker will determine the initial turbidity of the raw wine using the HI83749, then add the HI83749-20 Bentonite reagent to the sample and measure it a second time. If the second reading is lower than the initial reading + 2 NTU, the wine is stable, otherwise, the next step is to determine how much Bentonite needs to be added to stabilize the wine.

The HI83749 is built with a powerful processing system that automatically calculates the NTU value from the signals received by the two light detectors, and the algorithm automatically compensates for any color effects that may affect the measurement results. In addition, the optical system and measurement method have been improved to compensate for fluctuations in light intensity, reducing the need for frequent recalibration.
