PEROXIDES IN OLIVE OIL
Over time, cooking oils can deteriorate and spoil. The main cause of cooking oil deterioration is oxidation; when oil oxidation occurs, the flavor and odor can change, creating a product that is undesirable to the consumer. The unsaturated fatty acids found in the oil react with oxygen, creating peroxides as an undesirable byproduct. This oxidation reaction usually occurs under certain conditions, including exposure to light, the presence of metal ions, the introduction of oxygen, or when storage temperatures are not maintained. To determine the quality of the oil and the onset of oxidation, the peroxide value must be determined. The peroxide value is defined as the amount of peroxide oxygen per kilogram of oil, in units of milliquivalents or meq. The lower the peroxide value, the higher the quality of the cooking oil.
The HI83730-02 uses the EC 2568/91 method to measure peroxide concentrations in olive oil below 25.0 meq O.2/kg. When the reagent is added to a sample containing peroxide, the sample turns yellow; the higher the concentration, the deeper the color. The color change is analyzed colorimetrically according to the Beer-Lambert Law. This is the principle that light is absorbed by a complementary color, and the emitted radiation depends on the concentration. To determine the peroxide concentration, a narrowband interference filter at 466 nm (blue) allows only blue light to be detected by the silicon photodetector and omits all other visible light emitted from the tungsten lamp. As the color change of the reacted sample increases, the absorption of the specific wavelengths of light also increases, while the transmittance decreases.
