IMPORTANCE OF pH IN WINE PRODUCTION
Determining the pH in wine is important because it will affect the quality of the final product in terms of flavor, color, oxidation, chemical stability, and other factors. Normally in winemaking, the higher the pH, the lower the amount of acid in the wine. Three important factors in determining the pH of a wine include the ratio of malic acid to tartaric acid, the amount of potassium, and the total amount of acid present.
Most wines have an optimal pH between 2.9 and 4.0, with values varying depending on the wine. A pH value above 4.0 indicates that the wine may spoil quickly and is chemically unstable. The lower pH value allows the wine to stay fresher for a longer period of time and still retain its original color and flavor. Wine with a high pH will produce many bacteria and is not suitable for drinking. For finished white wines, the ideal pH is between pH 3.00 and pH 3.30, while the final pH for red wines is ideally between pH 3.40 and pH 3.50. The optimal pH before fermentation is between pH 2.9 and pH 4.0. The pH of wine not only affects the color of wine, but also affects oxidation, fermentation, protein stability and bacterial growth and fermentation.

CLEANING THE ELECTROD AFTER EACH MEASUREMENT is very important, if there is dirt on the electrode, it will quickly damage the electrode. Wash by stirring to dissolve dirt into specialized electrode cleaning solution. Do not scrub or scratch the inside glass pH sensor bulb. Then use a paper towel to absorb excess water (do not clean). The cleaning solution will help dissolve dirt more quickly than regular water but still ensures it does not corrode the electrode.
