pH IN FOOD
One of the most common measurements of food products is pH. pH affects many qualities of food products including flavor, fermentation, texture, appearance and shelf stability. Foods are usually divided into two groups based on their pH value. These groups include acidic foods with a naturally low pH of 4.6 or less and low-acid foods with a complete equilibrium pH value greater than pH 4.6 and water activity greater than 0.85. Low-acid foods can have their pH adjusted with an acid to lower the final pH and become an acidified food. Maintaining a lower pH will help prevent unwanted bacteria from growing.
